I'll leave this blog up for a while in case you have recipes you want to copy off of it, but I cannot promise to leave it up forever.Kristinhttp://www.blogger.com/profile/02164859480869985789noreply@blogger.com3tag:blogger.com,1999:blog-2382069097138320998.post-81142333841055011322011-09-18T20:42:00.006-06:002011-09-18T21:11:40.391-06:00Hatch Chiles... King Ranch! It's Hatch chile season here. I veganized this recipe and it was super awesome. Make this right away. I used medium Hatch chiles. It was spicy and my mouth is still burning, so maybe next time, I'll go mild.

It is not only easier, but tastes just like I remember (the non-vegan versions tasting). But seriously, this is the lazy vegan's lasagna. There is almost no chopping (only garlic), there is no sauteing or simmering, and there is minimal cleanup.

I'd get it mixed in with brownies. Occasionally I still find myself thinking about it. I decided it was time to fix that. I saw this recipe and decided to veganize it and improve it with the Wheeler Del Toro method (heat the milks and sugar and add arrowroot powder to it to thicken).

It was floppy looking, but I decided to try to find a good bunch anyway. They needed to be used up pretty quickly as they were already growing some eyes. I looked around the house to see what I had and came up with a potato, leek, carnival squash, roasted garlic soup. The recipe is from 1000 Vegan Recipes by Robin Robertson. It is actually a recipe for Chocolate Chip Banana Bread, but I made it into muffins. I really liked both the Tomato Bisque soup and the focaccia recipe from The Conscious Cook by Tal Ronnen. That being said, I do have some changes next time.
